Quality and Maturity :

• The pale, reddish surface is character­istically cross-striped by reddish-brown and small rings.
• The interior has the same color as the skin and is hard and woody in texture.

How to Eat :

• Finely chopped for hot and sour seafood salads and sliced in thin and round pieces to flavor soups.
